ESP ???

hi all, well im back on the road wid a b5.5 se tdi 130 estate . after my much loved b4 was put to sleep in a headon crash 
. was not my falt. i did get 3 x wot i paid for her 
. but anyway iv now got the ESP button . wicth iv never had befor . when do i use it or do i jus leave it on ??? .........
