B5.5 130bhp 1.9tdi overheating oddity

Drove from up north down to SW Wales yesterday (230 miles) without any problems, drove like a dream.

Started her up today and ran her for 10 minutes, then the STOP check coolant level, so checked to find no coolant. Topped her up, drove 10 miles, to find the gauge going high, stopped to find steam and no water left in the expansion tank again!
So took her home, topped her up, took undertray off to see if there was any leak, set at 2100rpm for 10 minutes, all seemed fine. Stepped her up to 3500 rpm, immediately the expansion tank went crazy boiling, with loads of water pouring out of the overflow pipe (ie at the bottom of the expansion tank)

What are your thoughts...?
Checks to make?
