Help me service my Passat

I used to service my own car about 20 years ago as a student. Now times are a bit harder I want to service my 02 Passat 1.9d. Just an oil and filter change, plus pollen and engine air filters.

Been quoted £120 for the oil service, so decided I'd have a go myself but had a couple of questions:

-What kind of oil and how much does it need 5l / 4l etc.
-What kind of cost for the oil (standard not long life)
-recommended an oil brand or place to buy it and what kind of cost
-I'm a oh fiddlesticks! for over tightening things so bit nervous about the torque setting for the sump plug anyone know what it is? (i'll by a new sump plug)
-Oil filter, same I tend to over tighten, any guidance about accessing it and how tight it should be.
-I,m OK with the pollen and engine air filters as have changed them before.

Later on I'm going to also change the front discs and pad as they had an advisory on the MOT. Looks pretty straightforward, rears look more complicated.
