Parking Brake failed MOT 11%

Hi all, I'm trying to put my trusty B6 wagon back on the road after not using it for 10 months and it has failed the MOT as the EPB is not sufficiently strong to pass the MOT. I work at a BMW dealer so you can imagine A: the stick I'm getting, B: they haven't got a clue about an older car especially non-BMW. I've searched online and just picked up a Haynes manual and I can't find any info on how to adjust the rear brakes to solve this problem.
I've driven the car around a bit to try and clean the discs and pads up, the efficiency on the normal brakes is no problem, just the parking brake.

This is on top of oil pump mod, new turbo, new EGR cooler, new Rad, so I was hoping it would sail through it's MOT as per usual, but no.
