Brake fluids

I intend to have it done soon. Its probably long overdue considering how much I've driven in the last year. I do too many spirited mountain B-road miles! Brake performance deteriorated from super reassuring to simply "acceptable". New genuine pads were installed not long ago.
I could go with boring VW genuine fluid with a low boiling point, but I'd prefer a higher spec option.
Are the following compatible or recommended, particularly with regard to ESP operation:
ATE typ 200
Motul RBF 660 / 600
Better alternatives?
DOT 5.1 options??
P.S. Is 1.0 L enough?
