Is This Right ??????? Oil Temp And Engine temp

Ok new to uk passats very happy i found it, I was just wondering if anyone could help me the other day i was driving along the road and noticed my engine temp was going over 90oC in all my previous cars i have never known the needle to go over 90oC mark. I thought the fan would kick in to cool it back down to 90oC but i did not hear the fan kick in at all can anyone tell me if this is normal and is it normal for my oil temp to rise above 100oC-110oC degrees and could you also tell me where the fuse diagram is for a passat b6 59plate as i want to check the fuse for the fan thanks
