How is the oil changed?

I had to check the under side on my Passat after running over a large brick. I got the car on ramps but fortunately there's no damage. However, it looks to me that the plastic under tray has never been removed, so it raises the question 'How does a dealer change the oil without removing the under tray?' The car's had two oil changes so do they suck the oil out through the dipstick tube or what?
