CV outer boot replacement suggestions?

As the title really! I did some searching but wanted some advice, both boots are split on my dads Passat so i need to do them. I started too but ran into the problem of this bolt being seized in:

I believe thats called the top pinch bolt? It looks like the alloys seized to the steel, i have tried multiple soakings of wd40 and lots of action with a big hammer and a breaker bar with no success. Any ideas?

On that subject just to check my method to change the boots, after watching videos/reading the Haynes i believe after removing the top joints and the hub nut everything should move to one side and the driveshaft slip out?
