Replacing wings and bonnet

I've got a B5.5 that I've bought a set of front wings and a bonnet for to replace my rusty parts.
They look like they all just bolt off/on. Has anyone got any tips, especially on removing the wings?
Do I need to remove the headlights and front bumper?
