Air Con Help And Advice Needed

My missus has an 09 Touran, we were driving to Santa Pod the other day and noticed that the air con was being a little intermittent.
Any advice appreciated as I know it's not a Passat but it will share most of not all parts.
For example, it would be blowing out perfect cold air, but at some point it wouldn't be cold anymore, then after a while it would be cold again.
There doesn't seem to be a pattern, I did notice that when it happened if I turned it up to speed 4 it seemed to kick it back into life.
Outside temp was hot (28-30) so was it just struggling due to this, or could it be a gas issue?
