It's common for manufacturers to have the part that fit a range of models
And a quick search on ebay shows results for several VW's for the same sharkfin. Not many used or OEM to choose from though. Mine is colour coded but many are black.

I believe a tool such as OBDeleven has the option to put the brakes into service position

See the Stalling - Is it only doing this if the engine is cold? Or combination of being cold and really cold weather? Intermittent faults are not fun to diagnose. Your electronic hand brake disengages when in motion - it's not constantly abrasing. And are you meaning painting your calipers or discs?...

You could rule out start stop by disabling it via something like an OBDeleven. I knew a Jag owner than had start stop and his faulted sounded similar to yours.
