The reason I asked about the temperature display is because the AC system needs to know the ambient temp and uses this info to that end. Long shot...

Is there a button inside the glove box, see photo, (from a LHD car). If fitted, it is there to disable the tailgate lock, (security feature).

If you have this button on your car, try pressing it to toggle between on & off and see if that makes any difference.

Check the position of the key slot in the tailgate, (horizontal or vertical).

Whichever way it is now, use the key to turn it to the other position, remove the key and see if it then works as before.

Don't worry about having replaced the condenser, possibly 'unnecessarily', - they can eventually block and cause the compressor to fail, so at the age of a B6, a new condenser will not have been a bad move even if it was not leaking.
