I'm all out ideas and think you have just had some bad luck. I've done four bearings with the same kit without issue. That is four extractions and four installations.

I've got phohotoes back. This if from when I did the Mrs MK4 Golf a few years back, note the chamfer on one end. The chamfered end goes in first and butts up against the stop. You might be able to pull that in with the driveshaft / CV joint if it pokes through enough.
