No worries - that's why I updated the thread in case anyone else ever has the same strange symptoms. I've done loads of head gaskets in the past on all kinds of engines but never had one that was like this.

Yes, just a bit of an unusual one. In any case, I've found the problem and managed to fix it myself for just the cost of the machine work, a headset, cambelt kit, aux belt, service bits and delete kit etc.
