If any liquid ran/spilt onto the engine it could be just that the smell gets stronger as the engine warms however this should dissapear with time. yeah i agree, if it fluctuates its the sender as the coolant cant heat up and cool down that fast, if it changes temperature slowly it's most likely the thermostat. Might be worth checking your oil to make sure it's not cream coloured or creamy.

Water could be escaping into the cylinders or oil through the head gasket if it's knackered.
